Anyone have green juice recipes for diabetics?

Ingredients:

  • 1 stalk of celery (not just a rib, the entire stalk)
  • 1 English cucumber (used the whole cucumber despite the photo showing half)
  • 1 zucchini
  • 1 Granny Smith apple
  • 1/4 lime
  • 1/4 lemon (peeled since it wasn’t organic)
  • A handful of Tatsoi greens, a few watercress sprigs, and a small sprig of Thai basil
  • A knob of ginger

Preparation and Notes:

This combination made about 1.5 cups of green juice per person. It was light, refreshing, and packed with flavor—exactly what I expect from the Sana 727 juicer. While I typically feed celery into the juicer whole, I trimmed this batch due to some oxidized ribs that didn’t look ideal for juicing.

Unfortunately, the produce quality wasn’t the best this time. On the bright side, I’ve started harvesting greens from my Aerogardens again. The Tatsoi is about a month old, so yields are still small. I’m growing it in a smaller Harvest Slim garden, and I’m curious to see how it performs. The watercress and Thai basil sprig also came from young Aerogarden plants.

Blood Sugar Impact:

After drinking his share, my husband tested his blood sugar an hour later—it was low at 70, showing no noticeable spike. However, he hadn’t eaten much the previous day, which might have influenced the results. He had a recent trip to the emergency room for stomach pain, which we feared could be an ulcer, but tests ruled that out. It turned out to be mild bowel inflammation, so I’m using green juice to support his recovery.

Important Reminder for Diabetics:

If you’re diabetic, always use a glucose meter to monitor how juices affect your blood sugar levels, as individual responses can vary. This juice was shared between two people, meaning my husband consumed the equivalent of half an apple and a quarter of a small citrus fruit. Additionally, the juice was unstrained.

Personal Note:

Though the title might suggest otherwise, I am not diabetic. However, I aim to minimize sugar in my diet, and this type of green juice aligns well with my preferences.

Have you tried Lou Corona’s Lemon Ginger Blast? I’ve been drinking it for three weeks, and it’s incredible!

I haven’t yet, but it’s on my list. The challenge is that some of the ingredients are hard to find or pricey where I live.

Have you considered using ginger and turmeric for inflammation? They’re fantastic and can be made into anti-inflammatory shots. I like adding beets and pineapple or orange for flavor, but you can tweak it to suit your needs. I usually use more ginger than turmeric. I also include a couple of lemons and mix apple cider vinegar into the catch container, with some black pepper for absorption.

Ginger is amazing in juice! I usually prefer fresh turmeric in tea, but both are super beneficial.

@Zed
I do use both, depending on the juices I’m making. Sorry, I replied in the wrong place earlier!

I use ginger and turmeric whenever I can find them. Turmeric isn’t always in stock at my local store, and ginger quality can vary, but I usually manage to get some. I don’t include them in every juice, but I use them pretty often—there’s a knob of ginger in the juice shown above.
