So last night, I helped out with a big dinner for 500 people. We had 4 people doing the plating and we managed to get it done in just 18 minutes! The apps and desserts were pre-plated and cold before the event, but still, it was a huge effort. I don’t do big groups like this too often anymore, but it was a lot of fun.
I’ve done tons of these. 500 plates in 18 minutes is crazy fast for 4 people. Wow! Nice job. That’s a plate every 2 seconds. Crazy fast.
We were in a good groove without too many specials, I will admit we had a foh policing the brims of the plates.

It’s a lot of fun when you don’t do it often and have the space for it.
Exactly, the most I usually do is about 100 or so. I helped out with a group of 2200 the summer before last, but that was a bigger setup with 4 teams of 5 plating and two people running resupply. We had 60 service staff for that. It was set up in tents on an island. Friends of mine organize it every other summer and it runs like a well-oiled machine.
